Breakfast is usually
the most boring and the most skipped meal of the day. On the way to work you
grab a quick piece of toast or a bowl of sugary cereal, but it doesn’t need to
be that way, in fact, breakfast can be the most creative meal of the day
without spending ages in the morning whipping up a masterpiece. I’ve got a
delicious chia seed raspberry pudding recipe for you to make quickly the night
before.
You will need:
1/4 cup Chia seeds
Tin of coconut milk
Handful of frozen
berries
Tsp vanilla essence
1 tbsp on honey
1 tbsp on honey
Topping (optional):
Cacoa nibs
Banana
Berries
Flaked almonds
1.
Place the coconut milk, vanilla, honey and berries in a
blender and blend until smooth.
2.
Pour the mixture equally between two bowls and
stir in the chia seeds.
3.
Leave in the fridge over night or at least 4
hours.
4.
Serve on its own or with any toppings of your
choice.
It’s
that simple! This is kind of like a healthy yoghurt that you can eat in the
morning, perfect for the summer but there’s no reason not to eat something
delicious in the winter too!
