Cheesecake Mess

I tried to make a delicious cheesecake for my friend but it failed, not because it wasn't absolutely delicious but because It didn't set in the fridge, so when taking it out it turned into a sort of Eton mess but cheesecake style, hence the name of the post. I couldn't waste a fabulous cheesecake recipe on myself so I thought I'd share it with you guys, and if you want make it into a real cheesecake feel free but here is the recipe for my cheesecake mess if you'd rather be a bit outside the box. 

You will need: 

500g of Cream Cheese (I used Philadelphia) 
200ml of Double cream 
100g of Vanilla Essence
1 Tablespoon of Icing Sugar 
100g of Biscotti Biscuits 
50g of Butter 


3 Biscotti Biscuits 


-Melt the butter in the microwave or on the hob and add to crushed biscuits then mix. 
-In another bowl add the cream cheese, icing sugar and vanilla essence and whisk until mixed and smooth. 
-Fold the double cream into the mixture and slowly stir until mixed. (It should not move when you tip the bowl). 
-Add the biscuit mix to the cream mix and stir. 
-Place the mix in the fridge and leave for for 5+ hours. 
Serve in little bowls, crush the rest of the biscuits and sprinkle on top.
